DIYSo I've searched high and low for a more powerfull gas burner for my wok cooking, but the most powerfull I could find so far is only about 20K BTU and it's not cutting it, need 60K BTU at least to get the elusive "wok-hey", or "spirit of the wok", that smoked taste all properly made wok food has. If you've ever eaten chinese takeout and tried making chinese/thai wok dishes at home and never made it taste as good, chances are almost 99% sure that you didn't have enough heat to get wok-hei, cooking in a wok with a kitchen gas stove or even worse, an electric plate is basically just cooking in a wok shaped pot. If the wok is not hot enough that the fumes from the food frequenly ignites into a huge fireball, it's not hot enough I'm cooking outside of course, I don't think it's do-able inside unless you like to wash down your whole kitchen everytime you finish cooking, damn it's messy cooking, the whole garden outside is foggy from all the food oil smoke but it's fantastic fun and a bonus is that the huge fireballs scares the piss out of the neighboors little yapping shit dogs so they run inside. I've made up plans for a home made gas burner that will put out around 180K BTU Basically I'm going to be building something similar to this:
Looks fairly simple and staightforward to recreate. Anyone has any knowledge of gas burners? |
